Ingredients

  • 1 green pepper, cut into 1/4-inch wide strips
  • 1 red pepper, cut into 1/4-inch wide strips
  • 1 medium onion, sliced
  • 1 can #1 can pineapple chunks
  • 1 cup add water to make a cup; reserve 1/4 cup pineapple juice
  • 2 tbsp cornstarch
  • 2 tbsp soy sauce
  • ¾ cup cider vinegar
  • 1 cup sugar
  • 2 slice fresh ginger, slivered

Method

  1. In a saucepan add 3/4 cup pineapple juice, sugar, vinegar and slivered fresh ginger. Stir over medium heat with a wooden spoon until the sugar is dissolved. Then bring to boiling point.
  2. Add the green pepper and onion, boil 2-3 minutes. Remove from heat.
  3. In a small bowl mix and stir together the cornstarch, soy sauce and 1/4 cup reserved pineapple juice. Stir over medium heat until thickened and translucent (about 3 minutes).
  4. Add the pineapple chunks and cooked meat and heat through. Serve.

Notes

A sweet and sour sauce for serving over cooked meat.
