Bishop's Bread
Ingredients
- 1 cup raisins
- ½ cup chopped nuts
- 2¼ cup sifted flour
- 1½ cup packed brown sugar
- ½ tsp salt
- ½ cup butter
- 1 tsp baking powder
- ½ tsp soda
- 1 tsp cinnamon
- 1 egg, well beaten
- ¾ cup dairy sour cream
Method
- Sprinkle 1/4 cup flour over the raisins and nuts.
- Combine the remaining flour with the brown sugar and salt; cut in the butter until the mixture resembles coarse meal; reserve 3/4 cup for topping.
- To the remainder, add the baking powder, soda and cinnamon; mix well. Add the egg and sour cream; stir until well blended. Stir in the floured raisins and nuts.
- Spoon into a greased 8x12-inch pan; sprinkle with the reserved flour-butter mixture plus a dash of cinnamon, if desired.
- Bake at 400 degrees for 25 minutes or until done.
Notes
Yield: 12 servings.
