Chow Mein Noodle Casserole
Ingredients
- 1 large onion
- 3 stalk celery
- 1 green pepper
- 2 cup leftover pot roast, or 1 lb. ground beef
- 2 tbsp butter or margarine
- 1 can 10 1/2 oz. condensed mushroom soup
- ½ cup water
- ½ tsp salt
- dash of pepper
- 1 can 3 oz. chow mein noodles
Method
- Chop the onion, celery and green pepper. Chop the leftover beef in small cubes. Cook the beef in 1 tablespoon butter or margarine for several minutes. If using ground beef, cook until brown and drain the fat. Transfer the beef to a 2-quart casserole.
- Melt the remaining butter in the pan, add the chopped vegetables and cook until crisp tender. Stir in the soup, water, salt and pepper. Pour into the casserole with the beef and mix well.
- Cover and bake in a 325 degree oven for 30 minutes. Sprinkle the surface with the noodles and continue baking for ten minutes.
