Salads And Salad Dressing

Ingredients

  • ¾ cup sugar
  • ¼ tsp ground allspice
  • 2 cup divided water
  • 2 cup cranberries
  • 2 envelope unflavored gelatin
  • ½ tsp finely shredded orange peel
  • 1½ cup orange juice
  • ½ cup mayonnaise
  • ½ cup chopped pecans

Method

  1. In a saucepan combine the sugar, allspice and 1/2 cup water; bring to a boil. Add the cranberries; bring to boiling. Reduce heat, simmer 5-10 minutes uncovered, till the skins pop. Cool to room temperature.
  2. Soften the gelatin in the remaining 1 1/2 cups water, stir over low heat till the gelatin dissolves. Stir in the orange peel and juice. Beat in the mayonnaise till well blended. Chill till partially set (i.e. the consistency of unbeaten egg whites).
  3. Beat the gelatin mixture with an electric mixer for 2-3 minutes till fluffy. Chill till the mixture mounds. Fold in the cooled cranberries and 1/2 cup nuts.
  4. Chill 4-6 hours. (Great as a molded salad.)
