Herb-Flavored Cornish Hens
Ingredients
- 2 Cornish hens, thawed
- 1 clove 1 per hen garlic
- ½ tsp 1/2 tsp per hen thyme
- ¼ tsp not necessary; 1/4 tsp per hen seasoned salt
- ¼ tsp 1/4 tsp per hen salt
- ⅛ tsp 1/8 tsp per hen pepper
- ¼ cup basting sauce butter
- ¼ cup basting sauce lemon juice
- basting sauce; a little paprika
- 1 tsp basting sauce thyme
- 2 tbsp for browning butter
Method
- In each hen place 1 clove garlic, 1/2 teaspoon thyme, 1/4 teaspoon seasoned salt (not necessary), 1/4 teaspoon salt and 1/8 teaspoon pepper. Truss the hens.
- Basting sauce: Combine 1/4 cup butter with 1/4 cup lemon juice, a little paprika and 1 teaspoon thyme.
- Brown the hens in about 2 tablespoons butter (not really necessary) and add more butter if needed.
- Arrange the hens in a roasting pan (a shallow pan is better) and roast about 40 minutes to 1 hour, basting about every 10 to 15 minutes with the basting sauce, until browned and tender. You can split the hens in half for quicker cooking.
