Ingredients

1½ cup sugar
½ tsp salt
¼ tsp cream of tartar
grated rind of 1 lemon
3 tbsp fresh lemon juice
2 egg whites
2 tbsp water

Method

Combine all ingredients in the top of a double boiler.
Cook and beat until thick and spreadable.
