Ingredients

  • 2 cup sifted Softasilk cake flour
  • 1¼ cup sugar
  • 2½ tsp baking powder
  • 1 tsp salt
  • ⅓ cup such as Crisco, Snowdrift, Spry, Swift'ning soft shortening
  • 1 tsp vanilla
  • 1 cup milk
  • ¼ cup 1 large unbeaten egg

Method

  1. Heat the oven to 350 degrees (moderate). Grease well and dust with flour a square pan, 9x9x1 3/4 inches.
  2. Sift the dry ingredients into a bowl. Add the shortening, vanilla and 2/3 of the milk. Beat 2 minutes, medium speed on the mixer or 300 vigorous strokes by hand. Scrape the sides and bottom of the bowl constantly. Add the rest of the milk and the egg. Beat 2 more minutes, scraping the bowl constantly. Pour into the prepared pan.
  3. Bake 30 to 35 minutes. Finish with your favorite icing or one of the toppings below.
  4. Orange Glaze: Mix 1/4 cup orange juice, 1/2 tsp grated orange rind, 1 cup sifted confectioners' sugar. Let stand on top of the oven while baking the cake, stirring occasionally. Leave the cake in the pan. With a fork, prick holes through the cake to the bottom. Pour the warm glaze over the top.
  5. Broiled Topping: Mix 3 tbsp butter or other shortening (melted or softened), 1/3 cup brown sugar (packed), 2 tbsp cream or top milk, 1/2 cup Wheaties or coconut (if desired), 1/4 cup chopped nuts. Spread on the baked cake. Place about 3 inches under the broiler (low heat) until the mixture bubbles and browns (3 to 5 minutes). Do not burn.
  6. Choco-Nut Topping: Mix 1 cup cut-up coconut, 3 tbsp water, 1/4 cup semisweet chocolate pieces (melted). Sprinkle over the hot cake.

Notes
