Lovelight Chocolate 2-Egg Chiffon Cake
Ingredients
- 2 eggs, separated
- 1½ cup sugar
- 1¾ cup sifted Softasilk cake flour
- ¾ tsp soda
- ¾ tsp salt
- ⅓ cup cooking (salad) oil such as Wesson
- 1 cup sweet milk may be used buttermilk
- 2 square 2 oz. unsweetened chocolate, melted
- 2 cup chocolate deluxe icing sifted confectioners' sugar
- ¼ tsp chocolate deluxe icing salt
- 1 chocolate deluxe icing large egg
- ⅓ cup chocolate deluxe icing soft shortening
- 2 square chocolate deluxe icing; 2 oz. unsweetened chocolate, melted
Method
- Heat the oven to 350 degrees (moderate). Grease well and dust with flour 2 round layer pans, 8 inches by at least 1 1/2 inches deep, or 9x1 1/2 inches, or one oblong pan, 13x9 1/2x2 inches.
- Beat the egg whites until frothy. Gradually beat in 1/2 cup of the sugar. Continue beating until very stiff and glossy.
- Sift the remaining sugar, flour, soda and salt into another bowl. Add the oil, half of the buttermilk. Beat 1 minute, medium speed on the mixer or 150 vigorous strokes by hand. Scrape the sides and bottom of the bowl constantly. Add the remaining buttermilk, egg yolks and chocolate. Beat 1 more minute, scraping the bowl constantly. Fold in the meringue. Pour into the prepared pans.
- Bake layers 30 to 35 minutes; oblong 40 to 45 minutes. Cool. Ice with Chocolate DeLuxe Icing.
- Chocolate DeLuxe Icing: Beat the confectioners' sugar, salt, egg, shortening and melted chocolate together until fluffy.
