Eggs & Cheese
Onion Tart
Ingredients
- 2 cup flour
- salt and pepper
- 6 tbsp butter
- 4 tbsp shortening
- 4 medium onions
- 6 oz try pepperoni kielbasa sausage
- 2 tbsp oil
- 1 egg
- 1 cup sour cream
- 1 tsp caraway seeds
- 1 tbsp chopped fresh parsley
Method
- Combine the flour and 3/4 teaspoon salt. Cut in the butter and shortening until the mixture resembles coarse meal. Stir in 5-6 tablespoons cold water to form a dough. Wrap and refrigerate at least 30 minutes.
- Roll the dough into a round about 12 inches in diameter and put on a baking sheet. Prick the dough and flute the edge to form a rim. Refrigerate. Heat the oven to 375 degrees. Bake until brown (about 15 minutes).
- Slice the onions. Cut the kielbasa or pepperoni into short strips. Heat the oil in a large fry pan. Add the onions and 1/2 teaspoon salt and cook, stirring, over medium-low heat until brown (15-20 minutes). Remove the onions, pour off the fat and add the kielbasa. Cook until just beginning to color (2-3 minutes).
- Beat the egg with 1 tablespoon water and brush over the pastry. Combine the onions, sour cream, 1/4 teaspoon pepper and caraway seeds. Spread over the pastry. Scatter the sausage on top. Bake until the cream puffs and begins to brown (10-15 minutes). Sprinkle with fresh parsley.
