Ingredients

  • 5½ 5 to 6 small red new potatoes with skin on
  • 1 onion, sliced
  • 1 garlic clove, minced
  • ½ red and green peppers, sliced lengthwise
  • salt and pepper
  • 1 lb pork sausage patties
  • 4 eggs, beaten
  • 2 cup milk
  • grated Swiss cheese

Method

  1. Boil the whole potatoes till almost done. Cool. Slice 1/4 inch thick. Set aside.
  2. Cook the pork sausage patties, reserving 2 tablespoons of fat in the fry pan. Saute the onions, garlic and peppers. Salt and pepper to taste. Cook till almost tender.
  3. In a buttered casserole, toss together the potatoes and onion-pepper mixture. Place the sausage patties around the top.
  4. Beat the eggs together, add salt and pepper, and slowly add the milk. Pour over the casserole till it reaches the top. Sprinkle with grated Swiss cheese.
  5. Bake approximately 45 minutes at 375 degrees.
