Potato Sausage Casserole
Ingredients
- 5½ 5 to 6 small red new potatoes with skin on
- 1 onion, sliced
- 1 garlic clove, minced
- ½ red and green peppers, sliced lengthwise
- salt and pepper
- 1 lb pork sausage patties
- 4 eggs, beaten
- 2 cup milk
- grated Swiss cheese
Method
- Boil the whole potatoes till almost done. Cool. Slice 1/4 inch thick. Set aside.
- Cook the pork sausage patties, reserving 2 tablespoons of fat in the fry pan. Saute the onions, garlic and peppers. Salt and pepper to taste. Cook till almost tender.
- In a buttered casserole, toss together the potatoes and onion-pepper mixture. Place the sausage patties around the top.
- Beat the eggs together, add salt and pepper, and slowly add the milk. Pour over the casserole till it reaches the top. Sprinkle with grated Swiss cheese.
- Bake approximately 45 minutes at 375 degrees.
