Victoria Sponge Cake
Ingredients
- 1½ cup self-rising flour
- grated peel of 1 1/2 lemons
- ¾ cup butter or margarine, room temperature
- ¾ cup sugar
- 3 eggs
Method
- Preheat the oven to 350 degrees. Grease 2 round 8-inch cake pans; set aside.
- Sift the flour into a small bowl; stir in the lemon peel. Set aside.
- In a large bowl, cream the butter and sugar with an electric mixer or a wooden spoon until light and fluffy. Beat in the eggs one at a time. Fold in the flour mixture.
- Divide the batter between the pans, spreading evenly. Bake 25 minutes or until the top of the cake springs back when lightly touched. Cool in the pans a few minutes, then turn out onto wire racks to cool completely.
