Apple Raisin Cobbler
Ingredients
- 6 cup sliced peeled apples
- ½ cup maple-flavored syrup
- ⅓ cup raisins
- ¼ cup brown sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 1 cup buttermilk baking mix
- 2 tbsp sugar
- ¼ cup milk
Method
- Preheat the oven to 400 degrees. Mix the apples, syrup, raisins, brown sugar, cornstarch, lemon juice, cinnamon and nutmeg in a large bowl. Spread evenly in a 9-inch square baking pan; cover and bake 45 minutes.
- Combine the biscuit mix, sugar and milk; mix well. Drop by tablespoonfuls onto the hot fruit mixture. Bake, uncovered, 20 minutes or until the fruit mixture is bubbly and the topping is golden brown.
- Serve warm with whipped cream or ice cream, if desired.
Notes
Yield: 4 to 6 servings.
