Ingredients

  • 6 cooking apples
  • ¼ cup sugar
  • ½ tsp cinnamon
  • 2 tbsp butter
  • 10 tbsp sugar
  • 1 egg, slightly beaten
  • 1 tsp vanilla
  • ⅔ cup flour
  • ¼ tsp baking powder
  • dash of salt
  • 2 tbsp milk

Method

  1. Wash and core the apples. Pare a strip around the center of each apple. Roll the apples in a mixture of the 1/4 cup sugar and cinnamon. Fill the centers with the remaining sugar-cinnamon mixture. Place the apples in oiled individual baking dishes.
  2. Cream the butter and sugar. Add the egg and beat well; blend in the vanilla. Add the dry ingredients alternately with the milk; mix until smooth. Spoon 2 tablespoons batter over each apple.
  3. Bake at 375 degrees for 40-45 minutes or until the apples are tender.

Yield: 6 servings.
