Banana-Nut Bread
Ingredients
- 2 cup sifted all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 3 tbsp nonfat dry milk
- ⅓ cup soft shortening
- ⅔ cup sugar
- 1 egg
- ⅓ cup water
- 1 tsp vinegar
- 1 cup mashed banana (2 or 3 bananas)
- ½ cup finely cut unsalted nuts
Method
- Grease well a loaf pan measuring 9x5x3 inches. Sift the flour, baking powder, soda, salt and dry milk together onto a piece of paper.
- Mix the shortening, sugar and egg in a 2-quart bowl until light and fluffy. Mix in gradually, until well blended, the water, vinegar and banana.
- Add the dry ingredients all at once, mixing quickly but thoroughly. Stir in the nuts.
- Put into the greased pan and bake in the center of the rack of a moderate 350 degrees F oven for 1 hour, or until the bread pulls from the sides of the pan.
- Let stand in the pan 10 minutes before turning out. Cool before slicing.
