  • 30 chicken wings (about 5 lbs)
  • ¼ cup all-purpose flour
  • 1 tsp salt
  • ½ tsp black pepper
  • vegetable oil
  • 6 tbsp butter or margarine
  • 6 tbsp use more or less according to taste hot pepper sauce
  • blue cheese dressing
  • celery and carrot sticks (zucchini, etc.)

Method

  1. Cut off the small tip from each wing. Cut each wing into 2 pieces. Wash and dry.
  2. Combine flour, salt and pepper in a paper bag. Dredge the wings.
  3. Place in oil in a heavy skillet to a depth of 1 inch. Heat oil to 350 degrees and fry wings until golden brown and crisp. Drain well.
  4. In a small saucepan, melt the butter and stir in the hot sauce. Pour over the wings. Cover and shake until wings are evenly coated.
  5. Serve on a platter with vegetable sticks and blue cheese dressing for dipping.
