Ingredients

  • 3 large ripe tomatoes, cut into 1/2-inch dice
  • 2 ripe avocados, pitted, peeled and cut into 1/2-inch dice
  • ½ cup fresh lime juice
  • 1½ cup 1/2 inch diced ripe cantaloupe
  • 1½ cup 1/2 inch diced ripe pineapple
  • ⅓ cup fresh orange juice
  • ⅓ cup plus 6 small mint sprigs for garnish chopped fresh mint leaves
  • ¾ cup plain nonfat yogurt or sour cream
  • 2 tbsp finely grated orange zest

Method

  1. Toss the diced tomatoes and avocados with the lime juice in a bowl. Add the diced cantaloupe and pineapple and the orange juice; toss again.
  2. Just before serving, toss the fruit mixture with the chopped mint leaves. Mix the yogurt (or sour cream) with the orange zest.
  3. Top each portion of salad with a dollop (about 1 tablespoon) of the yogurt-orange sauce and garnish with a fresh mint sprig.

Notes

This fruit salad, made even more refreshing by the yogurt-orange sauce, can be served on its own. When serving with Blushing Baked Salmon, simply toss the fruit with the juices and the mint. Serves 6. Per serving: 230 calories, 27g carbohydrates, 5g protein, 14g fat, no cholesterol.
