Easy-Mix Candies (Betty Crocker)
Ingredients
- 2 tbsp Easy-Mix Candy base butter or margarine
- ¼ cup Easy-Mix Candy base milk
- 1 pkg Easy-Mix Candy base; any creamy flavor Betty Crocker creamy frosting mix
- ½ cup for squares/clusters chopped nuts
Method
- Easy-Mix Candy (basic recipe for all creamy frosting mix flavors): In a medium saucepan, heat 2 tablespoons butter in 1/4 cup milk over low heat until the butter melts and the mixture just begins to simmer. Remove from the heat; stir in 1 package Betty Crocker creamy frosting mix (dry). Heat over low heat, stirring constantly with a rubber scraper, until smooth and glossy, 1 to 2 minutes. Do not overcook. (Using chocolate fudge frosting mix, increase milk to 1/4 cup plus 2 teaspoons. Using golden caramel frosting mix, decrease milk to 3 tablespoons.)
- Squares: Stir in 1/2 cup chopped nuts if desired. Spread in an aluminum foil-lined loaf pan, 9x5x3 inches.
- Wafers: Drop by teaspoonfuls onto waxed paper. If necessary, reheat the mixture slightly.
- Clusters: Stir in 1 1/2 cups salted peanuts or other nuts. Drop by teaspoonfuls onto waxed paper.
- Chocolate Fudge: Heat 2 tablespoons butter in 1/4 cup plus 2 teaspoons milk; stir in 1 package Betty Crocker chocolate fudge frosting mix and 1/2 cup chopped nuts as in the basic recipe. Line the bottom of a loaf pan, 9x5x3 inches, with aluminum foil, leaving 1 inch of foil at each end. Spread the mixture evenly in the pan. Chill until firm. Lift the candy out; cut into 1-inch squares. Makes 1 pound or 32 pieces. (Rocky Road Chocolate Fudge: stir in 1 cup miniature marshmallows with the nuts.)
- Milk Chocolate Peanut Clusters: Prepare the basic recipe with 1 package Betty Crocker milk chocolate frosting mix; stir in 1 1/2 to 2 cups salted peanuts. Drop by teaspoonfuls onto waxed paper. Let stand until firm. Makes 3 to 4 dozen. (Banana Peanut Clusters: substitute Betty Crocker Chiquita banana frosting mix.)
- Sour Cream Ribbon Fudge: Prepare fudge using 1 package Betty Crocker sour cream chocolate fudge frosting mix and 1/2 cup chopped nuts; spread half in a foil-lined 8x8x2-inch pan. Prepare a second batch using 1 package Betty Crocker sour cream white frosting mix and 1/2 cup chopped nuts; spread over the chocolate layer. Chill until firm. Cut into 1-inch squares. 64 squares.
- No-Cook Divinity: Combine 1 package Betty Crocker fluffy white frosting mix (dry), 1/3 cup light corn syrup, 1 teaspoon vanilla and 1/2 cup boiling water in a small mixer bowl. Beat on highest speed until stiff peaks form, about 5 minutes. Transfer to a large mixer bowl; on low speed or by hand, gradually blend in 1 package (16 ounces) confectioners' sugar. Stir in 1 cup chopped nuts. Drop by teaspoonfuls onto waxed paper. Makes 5 to 6 dozen. (Spanish Crunch: substitute dark corn syrup and salted shelled Spanish peanuts. Candied Cherry Delights: substitute 1 teaspoon almond extract for the vanilla and 1 cup cut-up candied cherries for the nuts. Peppy Mints: substitute 1/2 teaspoon peppermint extract for the vanilla and 1 cup crushed peppermint candy for the nuts.)
- Flavor Wafers: Prepare the basic recipe with 1 package Betty Crocker milk chocolate frosting mix and 1/2 teaspoon mint extract or rum flavoring; drop by teaspoonfuls onto waxed paper. Makes 5 dozen. (Substitute Betty Crocker creamy cherry, lemon or orange frosting mix; omit extract.)
- Almond Fudge: Prepare fudge with 1 package Betty Crocker creamy white frosting mix, 1 teaspoon almond extract and 1/2 cup slivered toasted almonds. Spread in a foil-lined loaf pan, 9x5x3 inches. Chill; cut into 1-inch squares. Makes 1 pound or 32 pieces.
- Lemon Coconut Clusters: Prepare the basic recipe with 1 package Betty Crocker Sunkist lemon frosting mix; stir in 1 can (3 1/2 ounces) flaked coconut and 1/2 cup slivered toasted almonds if desired. Drop by teaspoonfuls onto waxed paper. Makes 3 to 4 dozen. (Cherry or Orange Coconut Clusters: substitute cherry or orange frosting mix.)
