Ingredients

  • 1 lb large onions
  • 1 cup milk
  • 1 egg, slightly beaten
  • ½ cup flour
  • ¼ tsp salt
  • a dash pepper
  • ½ cup dry bread crumbs
  • for sprinkling salt

Method

  1. Slice the onions about 1/4-inch thick. Separate into rings. Soak about 15 minutes in the milk; drain. Combine the egg and 1/2 cup milk used to soak the onions. Blend the flour, salt and pepper.
  2. Roll the rings in the seasoned flour, then in the egg mixture and then in the dry bread crumbs. Gently shake to remove surplus crumbs.
  3. Heat deep fat to 375 degrees. Fry the rings 2-3 minutes until golden. Drain on paper towels; sprinkle with salt. Rings may be made ahead and refrigerated until you're ready to fry.
