  • 3 cup fresh berries in season
  • 1¼ cup sugar
  • ½ tsp cinnamon
  • 1 tbsp lemon juice
  • 1 egg
  • ¼ cup melted butter or margarine
  • 1 tsp orange peel, grated
  • ½ cup fresh orange juice
  • 1⅔ cup all-purpose flour, unsifted
  • 1½ tsp baking powder
  • ½ tsp soda
  • ½ tsp salt

Method

  1. Combine the berries, 1/2 cup sugar, cinnamon and lemon juice. Turn into a greased 9-inch square baking dish and bake, uncovered, at 350 degrees, 15 minutes.
  2. In a mixing bowl, beat the egg slightly then blend in the remaining 3/4 cup sugar, butter, orange peel and juice. Stir together the flour, baking powder, soda and salt; add to the egg mixture and beat until smooth.
  3. Spoon the batter evenly over the top of the baked berries. Bake another 30 minutes at 350 degrees or until the cake springs back when lightly touched in the center.

Notes

Serve warm or cold topped with ice cream. Serves 6-8. From Rosauers (Dessert DS-36).
