Hot Cheese Balls
Ingredients
- 2 tbsp butter
- 2½ tbsp flour
- ⅓ cup milk
- ¼ cup dry sherry
- ½ cup sharp cheddar cheese spread
- ¼ tsp salt
- ⅔ cup fine soft bread crumbs
- flour, for rolling
- 1 egg white, lightly beaten
- fine dry bread crumbs or cornflake crumbs
- cooking oil
Method
- Melt the butter and blend in the flour. Add the milk and sherry; cook, stirring until thick. Remove from heat and stir in the cheese, salt and soft bread crumbs.
- Turn into a shallow pan and chill. Shape into 1 1/4-inch balls; roll in flour, dip in egg white, roll in crumbs.
- Heat oil in a skillet and fry a few balls at a time, 45 to 60 seconds, until brown. Drain on paper towels and serve warm.
Notes
Serve with assorted crackers. May be made ahead, refrigerated and reheated 12 to 15 minutes in a 300 degree oven. Makes 18 balls.
