Ingredients

  • 1¼ cup butter or margarine, softened
  • ½ cup granulated sugar
  • 1 egg
  • 1 packet 2-quart size unsweetened lemonade soft drink mix, divided
  • 3 cup flour
  • ½ cup powdered sugar

Method

  1. Cream together the butter and granulated sugar; beat in the egg and 3/4 teaspoon of the lemonade mix. Stir in the flour until thoroughly blended.
  2. Roll the dough into 3/4-inch balls, place about 1 inch apart on lightly greased baking sheets. Flatten the balls slightly, if desired. Bake at 350 degrees for 18 to 23 minutes or until firm to the touch and very light golden.
  3. Transfer to racks and let cool slightly. Blend the powdered sugar and part or all of the remaining lemonade mix, to taste. While the cookies are still warm roll each in the lemon-flavored powdered sugar. Let cool completely. Store airtight.

Notes

Yield: about 4 dozen. Developed as a homemade version of store-bought Sunshine Lemon Coolers, based on a brandy ball cookie recipe. The secret is a packet (2-quart size) of unsweetened powdered lemonade for flavoring. Using the entire packet creates a very tart flavor; reduce the amount for a milder flavor.
