Mom's Hot German Potato Salad
Ingredients
- 4 cup hot potatoes, diced bite-size
- 7 slice 6-8 slices fried bacon, crumbled
- 2 tbsp bacon drippings
- 1 medium onion, chopped
- 1 tbsp flour
- ⅓ cup sugar
- 1½ tsp salt
- ⅓ cup vinegar
- ⅔ cup water
- ½ cup celery, chopped
- 1 tbsp parsley, chopped
- 6 frankfurters, cooked and chopped
- ¼ tsp pepper
Method
- Combine the potatoes and crumbled bacon; set aside. Fry the onion in the bacon drippings until light brown; add the flour and blend.
- Add the sugar, salt, vinegar and water. Bring to a boil, stirring constantly. Mix in the celery, parsley and frankfurters.
- Pour the mixture over the potatoes/bacon; sprinkle with pepper. Serve hot.
- Suggestion: Refrigerate overnight; reheat before serving. This allows the rich, smoked flavor to intensify. Serves 8 to 10.
