Ingredients

  • 2 large potatoes
  • 1 Tbsp butter
  • 4 Tbsp flour
  • 2 egg yolks
  • 1 Tbsp chopped parsley
  • salt, pepper, nutmeg

Method

  1. Mash boiled or baked potatoes and work in the butter, salt, pepper and nutmeg to taste. Stir in the flour, add the beaten egg yolks and chopped parsley.
  2. Sprinkle a little flour on the table and work the dough there, forming it into twenty small balls. Rub the cover of your saucepan with a little flour, then place the balls on the cover and let all the balls slide quickly into the boiling soup, letting them simmer for twelve minutes.
