Shredded Beef with Onions
Ingredients
- 1 lb round steak, cut in strips
- oil
- 1 clove garlic, minced
- 2 cup thinly sliced onions
- ¼ tsp sugar
- soy sauce
- ½ cup cashews, walnuts, pine nuts, pecans or almonds
- 1 tsp cornstarch
- salt
- 1 slice thin ginger root, crushed
- ½ green pepper, thinly sliced
- dash black pepper
- 1 tbsp marinade sherry
- 1 tbsp marinade soy sauce
- ¼ tsp marinade sugar
- ½ tsp marinade sesame oil
- 1 tsp marinade vinegar, optional
Method
- Marinade: Combine the sherry, soy sauce, sugar, sesame oil and vinegar. Stir until blended.
- Marinate the beef in the marinade 15 minutes, then sprinkle with cornstarch.
- Heat 2 tablespoons oil in a wok over high heat. Add 1/8 teaspoon salt. Lightly brown the garlic and ginger. Add the onions and stir-fry 1 minute. Add the peppers and stir-fry 1 minute. Sprinkle with sugar. Remove from the wok.
- Heat 2 more tablespoons oil in the wok. Add the cornstarch-coated beef. Stir-fry 2 minutes or until the color changes. Add pepper. Return the vegetables to the wok and mix well with the beef. Season to taste with soy sauce and salt. Garnish with nuts.
