Ingredients

  • 2 about 3 pounds acorn squashes, cut in half lengthwise and seeded
  • salt, pepper and nutmeg
  • 2 Tbsp margarine

Method

  1. Cut a small slice off the bottom of each squash half so it will stand level, cut side up. Place the 4 halves in a baking dish. Sprinkle the cut side with salt, pepper and nutmeg and add 1/2 tablespoon margarine to each half.
  2. Pour boiling water into the pan to a depth of about 1 inch. Bake in a 375 degree oven for 30 to 40 minutes, or until the squash is tender all the way through. Baste the edges with melted margarine during cooking. Add more boiling water to the pan if needed. Lift carefully from the pan to avoid spilling the juices.
