Ingredients

  • ½ lb frankfurters or knockwurst
  • ¼ cup finely chopped onion
  • ½ cup diced celery
  • 1 cup diced, pared raw potato
  • 1 can 13 3/4 oz clear chicken broth
  • 3 cup milk
  • 2 cup finely chopped cabbage
  • 2 tsp salt
  • ¼ tsp pepper
  • 2 tsp brown sugar
  • 1 tsp caraway seed, tied in cheesecloth bag
  • 1 cup light cream

Method

  1. Cut the frankfurters into 1/4-inch slices or the knockwurst into chunks.
  2. In a 4-quart kettle, combine the frankfurters, onion, celery, potato and chicken broth; bring to boiling. Reduce the heat; simmer, covered, 15 minutes.
  3. Add the milk, cabbage, salt, pepper, brown sugar and caraway seed; bring back to boiling. Reduce the heat; simmer, covered, 25 minutes longer.
  4. Discard the caraway seed. Stir in the light cream. Serve hot.

Notes

Makes about 2 quarts; 6 to 8 servings.
