Oven-Fried Cheesy Italian Chicken
Ingredients
- 1 tbsp margarine or butter
- ⅓ cup Bisquick baking mix
- ⅓ cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- 1 tsp salt, if desired
- ½ tsp garlic powder
- ¼ tsp pepper
- 3 lb 2 1/2- to 3 1/2-pound broiler-fryer chicken, cut up
Method
- Heat the oven to 425 degrees. Heat the margarine in a rectangular pan, 13x9x2 inches, in the oven until melted.
- Mix the remaining ingredients except the chicken; coat the chicken. Place skin sides down in the pan. Bake 35 minutes. Turn; bake until done, about 15 minutes. 6 servings.
- Oven-Fried Mexican Chicken: Increase the baking mix to 1/2 cup. Omit the cheese, Italian seasoning and garlic powder. Add 2 tablespoons cornmeal and 2 tablespoons chili powder.
- High Altitude: Bake uncovered 40 minutes. Turn; bake about 20 minutes.
