Ingredients

  • 1 5-6 pounds leg of lamb
  • 3 clove garlic, slivered
  • 1 juice of lemon
  • ½ cup olive oil
  • 1 tbsp leaf oregano
  • ½ tsp leaf thyme
  • 1 tsp salt
  • ½ tsp pepper

Method

  1. Cut shallow slits in the surface of the lamb and insert slivers of garlic.
  2. Prepare the marinade by combining the lemon juice, olive oil, oregano, thyme, salt and pepper. Turn the lamb through the mixture to thoroughly coat; marinate for two hours, turning frequently.
  3. Place the lamb on a rack in a shallow roasting pan. Cook at 350 degrees for 25 minutes per pound or until the internal temperature reaches 175 degrees. Baste frequently with the marinade.

Notes

Greek men traditionally prepare lamb this way for the Easter feast. Yield: 8-10 servings.
